Jeff and Emma Zimmerman restarted the historic Hayden Flour Mills in Tempe, Arizona in 2009, reviving heritage grain varieties that had largely disappeared from American agriculture. Their mill runs on 100% solar power, and every bag is stone milled in small batches, never bleached or chemically treated. Substitutes 1:1 in any recipe.
