The salmon comes from Kvarøy Arctic in Norway — a third-generation family farm, the first finfish operation in the world to carry the Fair Trade USA seal, and one of the most rigorously certified sustainable fish farms on earth. The fish are raised in the icy Arctic circle with deep ocean currents and fed a sustainable, nutrient-rich diet without antibiotics or chemicals.
From Norway the salmon travels to a fifth-generation family cannery on the central coast of Washington, where it's brined in extra virgin olive oil, natural sea salt, organic garlic salt, and organic brown sugar, then slow-smoked over beechwood, maple, and birch in small batches and hand-packed.
Eat it straight from the tin, on a bagel with cream cheese, over rice, or folded into scrambled eggs. It's also exceptional with Fly By Jing's Sichuan Chili Crisp if you want to take it somewhere unexpected.
