Chapulines — dried grasshoppers — are a traditional Oaxacan ingredient with deep pre-Columbian roots, used in regional cooking the same way other cultures use dried shrimp or anchovies: as a savory, mineral-rich background note that deepens everything around it.
The entire ingredient list is sourced from Oaxaca — toasted avocado leaf, dried hoja santa, regional piloncillo, and Oaxacan salt alongside the three-chile blend of Pasilla Oaxaqueño, Chipotle Meco, and Chipotle Morita.
