Brisca was founded by Sandra Diez, a Spanish-born entrepreneur based in the Pacific Northwest, with a mission to bring genuine Spanish olive oil culture to American kitchens. Their olives are harvested and milled on the same day in Spain's La Mancha region — a step most producers skip. Cold-extracted at low temperatures, zero-waste production powered by renewable energy. This is a finishing oil, not a cooking oil — use it where the flavor will show.
