Chipotles Adobados — five chile varietals braised together until nearly spreadable. This is not canned chipotles in adobo. Chipotle Meco, Chipotle Morita, Mulato, Ancho, and Pasilla are braised low and slow with a house spice blend, fresh herbs, piloncillo, and two vinegars until the chiles surrender into a deeply smoky, slightly sweet, seriously spicy paste.
The word "chipotle" comes from the Nahuatl "chilpocli" — xilli (chile) + pocli (smoked). Adobados means braised in adobo sauce, a preparation built from ground dry peppers, spices, herbs, and vinegar. This jar is both etymology and execution. Made by hand in small batches by Nacxi Gaxiola, a chef-researcher with nearly 20 years in authentic Mexican cuisine.
Rub into meat before grilling, spread onto sandwiches, simmer into stews, blend into cooking salsas, or mix with sour cream for a creamy pasta sauce. Heat: hedonistically hot. Vegan, gluten-free, no preservatives.
