Tidewater Grain Co. grows and mills their Carolina Gold on their family farm in Oriental, North Carolina — the first rice farm in the state in over 120 years. These middlins, also called rice grits, are a byproduct of that milling process and a genuine piece of Southern food history. Cook them slow with butter and cheese, serve under shrimp, or use them anywhere you'd reach for grits or polenta.
