The result is an oil where the citrus character is woven through the fat itself rather than sitting on top of it. It's the difference between flavor and fragrance.
Bergamot is the citrus used to flavor Earl Grey tea — aromatic, floral, and complex in a way that lemon isn't. Here it's pressed together with early-harvest Arbequina olives from Gaia Oliva's single estate in the Aegean region of Turkey, using cold-pressing equipment from Tuscany within hours of harvest. A women-owned producer ranked #8 among the top 100 olive oil producers worldwide.
Drizzle over grilled fish, fresh salads, or roasted vegetables. Finish a risotto or pasta just before serving. Surprisingly good over vanilla ice cream or panna cotta.
